Colombia Decaf Cherry
For this lot of coffee, the process begins with creating the fermentation culture that will be used. First, a portion of a mother culture, containing microorganisms like Lactobacillus and Saccharomyces cerevisiae, is separated and fed freeze-dried cherries and sweetener like panela. The cherries contribute flavour to the culture, while the sweetener not only is a source of food to keep the microorganisms in the culture alive, but also acts as a sweetener to energise the fermentation and bring the culture's sugar content to a higher level.
The coffee cherries are picked and stored in bags for an initial 24 hours. The fermentation process is mainly done to prevent the coffee beans from being damaged when they go through eventual pulping. However, it is also known to create more fruity character in the coffee as well.
Next, they are placed into fermentation tanks, together with the fermentation culture that consists of freeze-dried cherries. The coffee is left to ferment for approximately 4 days.
After the co-fermentation process, the coffee is then taken to dry on raised African beds, without washing, for a drying duration of about 10 to 12 days.
Last but not least, it is milled and sent to the decaffeination plant for the final stage of EA (also known as Sugarcane) decaf.
